In the heat of summer, chilled seafood platters are a welcomed addition to any menu as they’re appetizing and refreshing! All you need is a few platters and ice, and we’ll supply the seafood!
Temperature is important in keeping shellfish safe for consumption. If you keep your shellfish in the fridge where the temperature can fluctuate every time the door opens, place a wet cloth on the shellfish with ice on top of it, leaving the bag open.

Oysters on the Half Shell
If you’ve got a shucking knife, you’re in business! Serve your oysters with mignonette, hot sauce, horseradish, and lemon wedges.
Step-by-Step Oyster Shucking Instructions:
- Hold the oyster with a tea towel, flat side up.
- Gently work the tip of the oyster knife into the hinge (where the shells taper together).
- Twist the oyster knife to pry the shells apart.
- Slide the blade across to sever the oyster from the top shell.
- Discard the top shell and inspect the oyster, removing any debris.
- Slide the blade under the oyster, cutting it free.
- Place the oyster on the half shell on a bed of ice.

Prawns, Mussels, Clams, and Scallop Ceviche
Cook the plump, wild Argentinian Red Jumbo Prawns in a pot of salted boiling water for 2-3 minutes if frozen, and 1-2 minutes if thawed. Enjoy with cocktail sauce!
Cook the meat-filled, live Saltspring Island Mussels and earthy, live Savoury Clams in a pot of salted boiling water for 5 minutes, or until the shells open.
We used the sweet, and exceptionally tender Bay Scallops to make Scallop Ceviche, recipe courtesy of Mama Maggie’s Kitchen.
King Crab, Dungeness Crab, and Lobster Tails
Our frozen, wild Red King Crab claws and Dungeness Crab sections are pre-cooked. Place them in a pot of salted boiling water for 2-3 minutes.
Thaw our frozen 4oz East Coast Lobster Tails in the fridge. Cook them in a pot of salted boiling water for 4 minutes.
Serve this platter alongside seafood forks and crab crackers for the best experience!
