Halibut Salad with Bourbon Sauce Recipe

Served over a bed of spinach, this halibut salad is perfect for your date night because it is fairly easy to make and also feels quite fancy.

Halibut filets are commonly white, firm and meaty which makes them perfect for different types of sauces. The sauce we are going to use for this one is a delicious bourbon sauce.

Here’s the ingredients that we are going to need:

  • 2 halibut filet portions (Easily replaced with cod if you prefer)
  • Pinch of sea salt
  • 2 butter tablespoons
  • 1 olive oil tablespoons
  • ¼ cup of balsamic vinegar
  • ¼ cup bourbon
  • ¼ cup honey or sorghum syrup
  • 4 ounces of fresh spinach

Let’s start by patting dry the halibut and sprinkle it with some salt. Remember to let the halibut come to room temperature. Meanwhile, let’s jump to the sauce making.

Heat a small pot at medium temperature and once it’s hot add some honey in it. Stir lightly and as soon as the honey turns into a dark amber color pour bourbon and balsamic vinegar. Mix it and stir for another couple of minutes or until you see it thickens. Then remove from heat and cover the pot to keep warm.

Now, heat up a pan and add 1 tablespoon of butter and olive oil. Then place the halibut in the pan and let it cook for about 3 minutes each side. Add extra butter on top of the halibut and let it melt as the halibut cooks. Remove the halibut from the pan and put aside.

Finally, lower the heat and place the spinach in the pan to toss it until it begins to wilt. Once it’s done, transfer the spinach to plates and serve the halibut on top of it.  Now pour your bourbon sauce. And if your sauce cools off and thickens too much just heat it up again in the same pot for a minute or two.

And that’s it! Time to enjoy!
