Ingredients:

- 227g (8 oz) Live Clams
- 227g (8 oz) Live Mussels
- 227g (8 oz) Baby Scallops
- 454g (1 lb) Argentinian Prawns, peeled and deveined
- 1 bag of Seafood Medley (mix of your choice)
- 1 g Saffron
- 500g Valencia Paella Rice
- 750 mL Halibut Stock

Instructions:


1. Prep Work: 


   - Clean and Prepare Seafood: Rinse, clean, and pat dry the treasures of the sea, ensuring purity and freshness. Begin by giving the clams and mussels a thorough rinse under cold water. Ensure the prawns are clean and deveined, patting all seafood dry with paper towels.


   - Prepare Saffron: Soak in warm water, releasing its fragrance and colour, adding a subtle touch of antioxidants. In a small bowl, let the saffron steep in warm water for 10-15 minutes. This releases its flavour and imparts a golden hue to your paella.


   - Prepare Paella Rice: Rinse the Valencia Paella Rice, ensuring purity of flavour, offering complex carbohydrates. Rinse the Valencia Paella Rice until the water runs clear. Set it aside for the cooking process.


   - Prepare Halibut Stock: Warm it for the upcoming infusion, a base rich in minerals. Warm the Halibut Stock in a separate pot over medium heat, keeping it ready for later.


 
2. Cooking: 


   - Start Cooking Paella: Olive oil sizzles, setting the stage for a flavourful dance. Heat olive oil in a large paella pan or a wide, shallow skillet over medium heat.

3. Simmer and Serve:
