- 1 bag of Seafood Medley (mix of your choice)
- 750 mL Halibut Soup Stock
- 1 West Coast Bouillabaisse Soup Mix

Prep Work:

1. Clean and Prepare Seafood:
- Rinse the live clams and mussels thoroughly under cold water.
- Clean and devein the prawns.
- Pat dry all seafood with paper towels.

2. Prepare Soup Base:
- In a large pot, heat the Halibut Soup Stock over medium heat.

3. Prepare Bouillabaisse Soup Mix:
- Follow the instructions on the West Coast Bouillabaisse Soup Mix package. Usually, it involves mixing the contents with water or broth.

4. Start Cooking Seafood:
- Add the clams and mussels to the pot first. Cover and let them steam for 5 minutes or until they start to open.

5. Add Remaining Seafood:
- Add the baby scallops, prawns, salmon, and snapper rockfish to the pot. Stir gently to combine.

6. Add Seafood Medley:
- Add the seafood medley to the pot. Ensure everything is evenly distributed.

7. Pour in Bouillabaisse Soup Mix:
- Pour the prepared West Coast Bouillabaisse Soup Mix into the pot. Stir well to combine all the flavours.

8. Simmer:
- Reduce the heat to low and let the bouillabaisse simmer for about 15-20 minutes, or until all the seafood is cooked through. Be careful not to overcook.

9. Adjust Seasoning:
- Taste the broth and adjust the seasoning with salt and pepper as needed.

10. Ladle and Garnish (Optional):
- Ladle the bouillabaisse into serving bowls, making sure to include a variety of seafood in each bowl.
- Garnish with fresh herbs like parsley or cilantro for a burst of freshness.

11. Serve with Crusty Bread:
- Serve the bouillabaisse with crusty bread on the side for dipping into the flavourful broth.

Enjoy the Feast:
