West Coast (Sockeye & Snapper) Gefilte Fish Cakes

With Passover quickly approaching, it got us thinking about gefilte fish. 7 Seas Fish Market has been mincing fish for holidays such as Passover for the past 25+ years. This year, our friends Susy and Eran at Nava Creative Kosher Cuisine kindly shared a Gefilte Fish Ring recipe, which we adapted to make our very own version for the store! Enjoy! 

(makes 30 fishcakes)

Ingredients

3 carrots
2 tbsp dill                              
2 onions
3 lbs minced fish
     -1.5 lbs skinless sockeye salmon
     -1.5 lbs local snapper
4 eggs                          
1.5 cups cold water
6 tbsp matzah meal
3 tsp salt                              
2 tsp pepper                        
3 tbsp sugar
8 cups panko breadcrumbs*              
*Only add if you wish to turn them into fish cakes (omit if you use a bundt pan style application).

 

Directions

  1. Preheat oven to 325° F.
  2. Finely process carrots and dill.
  3. Chop onions and mix with fish, eggs, water, matzah, and seasonings on medium speed for 15 minutes.
  4. Fold in carrots.
  5. Spread mixture in sprayed 10” Bundt pan.
  6. Place Bundt pan in 1” of hot water.
  7. Bake uncovered for 1 hour.
  8. Cover loosely and bake for 1.5 hours until done.
  9. Let cool for 20 minutes and unmold.
  10. When completely cool, cover and refrigerate.
  11. Garnish with tomato and cucumber.
